Make these!!
Right now! But double the recipe, at least- it doesn't make many and you'll definitely want lots!!!
Lemon Crinkle Cookies
Ingredients:
½ cups Butter, Softened
1 cup Granulated Sugar
½ teaspoons Vanilla Extract
1 whole Egg
1 teaspoon Lemon Zest
1 Tablespoon Fresh Lemon Juice
¼ teaspoons Salt
¼ teaspoons Baking Powder
⅛ teaspoons Baking Soda
1-½ cup All-purpose Flour
½ cups Powdered Sugar
Directions:
Preheat oven to 350 degrees. Grease light colored baking sheets with non stick cooking spray and set aside.
In a large bowl, cream butter and sugar together until light and fluffy. Whip in vanilla, egg, lemon zest and juice. Scrape sides and mix again. Stir in all dry ingredients slowly until just combined, excluding the powdered sugar. Scrape sides of bowl and mix again briefly. Pour powdered sugar onto a large plate. Roll a heaping teaspoon of dough into a ball and roll in powdered sugar. Place on baking sheet and repeat with remaining dough.
Bake for 9-11 minutes or until bottoms begin to barely brown and cookies look matte {not melty or shiny}. Remove from oven and cool cookies about 3 minutes before transferring to cooling rack.
*If using a non stick darker baking tray, reduce baking time by about 2 minutes.

Whoops!
So Andy is helping me with Mallory today because I had a HUGE catering order. Well, I'm almost finished and she wants a bottle, so I asked him to make me one, he did and I started feeding her. Keep smelling vanilla, couldn't figure it out- everything is out of the oven... Then it hit me. I found an awesome recipe for French Vanilla coffee creamer on Pinterest last week. Well I made it in a reusable 20 oz water bottle that I used to make formula in. I now make formula in a 30 oz shaker bottle. That was beside the creamer in the fridge! She sucked down 4 oz of coffee creamer! It's sweetened condensed milk, milk and vanilla! AND she's lactose intolerant! What in the world is she going to do- either scream from the dairy or be tanked from the sugar!!!!! Aaaggghhhh!!

Busy, busy, busy!
Wow, shouldn't I have more to show for the busy-ness of the last week?? A clean house, at least?
So I have my first real catering job this weekend! I'm making lots-o-food for a Christmas party on Saturday evening! I'm very excited and can't wait to get started! I'm making: mini-candy bar pies, pumpkin whoopie pies, Oreo truffles, sausage balls, lavash, bruschetta, spicy chicken skewers, cheese grits, and cheese straws! Yum! I'll be sure to post pictures of everything!
